Sauteed Portobello with Baked Purple Potato Coins


I'm going to let the picture tell the story on this one. If you like what you see, read on. My tummy highly recommends it. Enjoy!

1 tomato, sliced
1 cucumber, sliced
2 portobello mushrooms
1 onion, sliced
1 purple potato, sliced
1 lettuce leaf
2 cloves of garlic, chopped
1/2 cup water
lemon juice to taste
soy sauce to taste
pepper to taste


1.Healthy saute the onion and portobello mushrooms in the water under they start to tender.
2. Bake or boil or steam purple potato until fully cooked.
3. Add soy sauce, lemon juice, and garlic until fully cooked. Season at will (mmm)
4. Place on lettuce and plate as shown in the photo above.
Goes great with red wine!
