Borscht

Borscht. Try and say that again. It's not that difficult or anything but there are 5 consonants in a row. That's a lot of consonants with only 1 vowel. Anyway...

Where was I? Right, Borscht! This is some awesome Ukrainian Borscht. Not sure what borscht is? It's a beet soup with a couple other veggies in it. That's what gives it the wonderfully dark red (almost blood-like) color.


We made a couple tweaks on a traditional recipe, and it turned out to be a huge hit! Like the sweet and salty together? Then you'll love this. Enjoy!

Asian Sauteed Greens

Got lots of wonderful greens that are just a little too blah to eat raw? Then come on down to Grubby's for some delicious Asian Sauteed Greens. Look, it even comes with a side salad. Any cooked greens will work, but a variety is best. And toss a turnip in for good measure. Enjoy!

Disney's Tuscan Salad

Tuscan Salad

Wine Country Trattoria

Yields 1 serving

Handful of mixed greens or mesclun mix
1 oz. black sliced olives
1 oz. diced red bell peppers
1 oz. diced celery
1 oz. white beans
2 ea. sliced beets (not pickled)
2 ea. whole pepperoncinis
3 ea. tomato wedges

Top with grated mozzarella, a few pieces of sliced salami and croutons. Guests are given a choice of 4 dressings - Italian, Blue Cheese, Ranch or Oil & Vinegar - and all are commercial dressings.

Beet Ricotta

Just look at that color! Beautiful.

The thing about making your own ricotta is you've got a couple different ways to go about it. And sometimes it's a pain in the rear because of the amount of time needed or making sure the milk or whey isn't burning, etc etc etc.


But fret not. There is an easy 5 minute method that you're going to love. I'll explain more about that below.

This was really fabulous on a slice of toast as an appetizer. I wish I had more, but alas, no more beet juice. Enjoy!
