Middle Eastern Salad
Yield: 8 servings
- 1 lb cucumbers, diced
- 1 lb tomatoes, diced
- 1/2 cup fresh parsley, minced
- 3 tablespoons olive oil
- 3 tablespoons lemon juice
- Mix all ingredients together. Add salt to taste.
- Best served immediately, as the salt will extract the juices from the vegetables and make it more liquidy.
