Salmon, Spinach, Mushroom, Feta Flatbread Pizza

I am not one of those people who needs to make every single darn little thing from scratch. Don't get me wrong now - I love to make most things from scratch, and have an almost-obsessed desire to know how things work, but I don't need to do it every single time I make something. So for that reason (and because it's so darn cheap) I buy grocery store pizza dough and let it rise at home. Easy.


So at that point it just becomes a question of what you want to top your pizza with. I'm a huge fan of the nontraditional kinds of pizza. I've never done salmon on a pizza, so I thought I'd give that a try with the fresh spinach and mushrooms I bought. Then I threw on some feta I bought earlier and crumbled that over it after it finished baking, so as not to ruin that precious cheese.


It turned out amazing! The worst part was the dough, which was my fault for not letting it rise properly and spreading it out improperly as well. It made for a really crispy crust though, and only slightly on the chewy side of things. What's your favorite way to do an nontraditional, yet simple, pizza?

Ingredients

1 package of store-bought pizza dough
1/2 pound mushrooms, sliced
spinach, washed thoroughly
2-3 oz feta cheese, crumbled
1 salmon fillet, uncooked and diced
1 clove garlic, diced
olive oil
powdered garlic
salt and pepper to taste
optional: crushed red pepper, oregano

Directions

1. Let dough rise according to packaged instructions. Roll out into the shape of whatever you're using to bake it - be it cookie or baking sheet or pizza stone. Once done, preheat oven to 400 degrees.

2. Brush top of dough with olive oil and sprinkle some salt on. Add garlic and powdered garlic across top.

3. Layer spinach first so that it covers most of the pizza. None of that sissy stuff where you hardly see the ingredient. Not today. Not here.

4. Evenly distribute the remaining ingredients (minus the feta) as you like.

5. Cooking should take about 10-15 minutes. Keep checking and once the dough begins to turn golden, it's likely done.

6. Once cooked, immediately top with feta so it warms nicely. Slice as you wish before it cools too much, serve, and enjoy!

  1. Your toppings sound delicious! I have been craving non-traditional pizza like crazy. But my traditionalist family always make faces when I suggest different toppings. I am craving potato pizza right now!

  2. I love potato on pizza. There's this wonderful BBQ Chicken Mashed Potato pizza I've made (that I'm now craving) which is mmm mmm good!
