Okara Stir-Fry

Okara is a byproduct of the soy milk-making process. It is a high-protein, high-fiber ingredient that can be used in a variety of dishes. Here is a new recipe that uses okara:

Okara and Mushroom Stir-Fry

Ingredients:

  • 1 cup okara, fresh or frozen
  • 1 cup sliced mushrooms (any kind)
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (any color)
  • 1 clove garlic, minced
  • 1 tablespoon oil
  • 1 tablespoon soy sauce
  • Salt and pepper, to taste

Instructions:

  1. In a large frying pan or wok, heat the oil over medium-high heat.

  2. Add the onion, bell pepper, and garlic to the pan and stir-fry until the vegetables are tender.

  3. Add the mushrooms to the pan and continue stir-frying for another minute or two, until the mushrooms are softened.

  4. Add the okara to the pan and stir-fry for another minute or two, until it is heated through.

  5. Add the soy sauce and stir to combine.

  6. Season with salt and pepper to taste.

  7. Serve the stir-fry over rice, noodles, or your favorite grain.
