Popovers

Yum

This has got to be just about the easiest thing in the world to make. Well, in terms of a breakfast or dinner roll.


And that's the great thing about popovers. They can be part of breakfast or part of dinner. Oh, and if you can't eat them all at once, don't worry. They're great warmed up in a toaster oven too.


And be sure to watch them pop over because it's really cool! Enjoy!

Yields 10-12 popovers
Ingredients

2 eggs
1 cup all-purpose flour
1 cup milk
1/4 teaspoon salt
butter

Directions

1. Preheat oven to 425 degrees F with muffin pan in the oven.

2. In a medium bowl beat eggs slightly. Beat in flour, milk, and salt until just smooth; being careful not to overbeat.

3. Take pan out of the oven and melt a small dab of butter in each cup. Fill cups 1/2 to 3/4 full full.

4. Bake at 400 degrees F for 15 minutes. Decrease oven temperature to 350 degrees F for 15 minutes more. Remove from cups and serve piping hot.
