Chilled Pineapple in Cottage Cheese

A perfect summertime treat. Perfect for the morning. Perfect for an afternoon snack to cool off. Perfect for a hot, humid evening out on the porch.

I prefer nonfat cottage cheese, and alternatively, yogurt can be used. Hell, chilled anything and cottage cheese and/or yogurt sounds outstanding when it's hot. So pick and choose. Toss in some cinnamon (like we did), lemon juice, or grand marnier, and enjoy!

Incidentally, we enjoyed these as a dessert on a muggier-than-usual kind of day. They were so good it made the mug go away! Well, almost. What do you do to cool yourself off on those kinds of nights?

Cottage Cheese Pancakes!

I'm kind of proud of these pictures - for once. It's all thanks to the fact that we made something early enough that the light shown beautifully into the kitchen at just the right angle. Well, moving on...

Have you ever heard of cottage cheese pancakes? I hadn't until J told me about the fond childhood memories she had with her friend and devouring one after the other right out of the pan. So we just had to have them!

I imagined they would be like a regular pancake - you know, cakey and whatnot but with cottage cheese in the recipe. Oh how wrong I was. It's almost like the Oatmeal Pancakes or even the Pumpkin Oatmeal Pancakes from last autumn.


They're so light, delicate, and simple I can't help but eat a ton of them. I'm always interested in new kinds of pancakes and breakfast foods in general, so if you have any recipes to share, please do. And if you've heard/made cottage cheese pancakes yourself, do tell. Maybe there's an exciting variation out there we can try. Enjoy!

Banana Buttermilk Bread (Act II)

ActII, Scene I: Our hero, Grubby (the little green lad up top), loves baking, and desires nothing more than to be healthy as well. Sometimes these forces oppose each other, and sometimes they are harmonious, and then there are the times when the desire to be healthier overcomes his sense of baking fundamentals (like we have here today). He slaves away over the mixing bowl, and pours the batter into the pan, thrusting it into the oven.

A few edits, revisions, touchups, substitutions, experimentations, and otherwise slight changes to the original Banana Buttermilk Bread.

Extra points for those who spot them. Points being my subscription to your blog and possible recipe highlight in a future post. Enjoy!

Grits Griddle Cakes topped with Cottage Cheese Yogurt

Just a little something I cooked up the other morning for breakfast. Having the time to cook your own breakfast most days is really a blessing sometimes. It leads to wonderful experimentation moments like this one - Grits Griddle Cakes topped with Cottage Cheese Yogurt.

Not that it was THAT complicated or difficult to come up with. I mean I had already created the cottage cheese yogurt. I just used it differently this time.

Cottage Cheese Yogurt

I don't know why I came up with this. I just wanted to get some of the lactose out of the protein-rich cottage cheese so that it might be even healthier and easier to digest. It turned out better than expected though. I thought maybe it would have the consistency of cottage cheese and the tartness of yogurt, but it's really more of a fine balance between the two. Creamy cottage cheese that is less salty and more appealing texture-wise.

It's uber simple (I always opt for the simple), and best of all it can be combined with a variety of toppings or addins. I added oats to mine the night before and a drop of tahini right before I devoured it for breakfast. Experiment with your own unique take on Cottage Cheese Yogurt. Enjoy!
