Perfect Collard Greens

These are the perfect basic collard greens. As is, they're vegan. From here, you can fancy them up however you like. They go great with some mac and cheese. Enjoy!

Perfect Collard Greens

Yield: 6 servings
Ingredients
  • 1 large bunch collard greens
  • 1 tablespoon butter
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon hot sauce
Cooking Directions
  1. In a large pot, bring 3 quarts of water to a boil and add seasoning and hot sauce. Reduce heat to medium.
  2. Wash the collard greens thoroughly. Slice into 1/2 to 1-inch thick slices.
  3. Place greens in pot and add butter. Cook for 45 to 60 minutes, stirring occasionally. When done, taste and adjust seasoning.

Chicken and Waffles

Sometimes it's nice just to have a simple southern comfort creation. Sometimes you don't even have to do much of the difficult cooking yourself.

Take, for instance, this chicken and waffles dish here. The fried chicken is leftover from Popeye's, baked in a toaster oven to get it crispy, then served with some homemade waffles and a side of poached collard greens and garlic. It was delicious in its simplicity, and it was exactly what the doctor called for.

A fun way to treat those leftovers is always a bonus. Enjoy!

Healthy Eggplant-and-More Pasta

I have a challenge for you today. Just looking at this eggplant and pasta dish, I want you to guess what's in it. Also, why do I call it healthy? My hope is that you'll be able to tell just from the pictures.

Butter Thyme Fish with Collard Greens +

The very lightest hint of butter with the addition of fresh thyme melt this fish to perfection. We used wild pollock but any white fish will do.


Plus the side of collard greens (semi-southern style) proves a winning combination for a healthy and happy dinner. Fish, greens, and rice - mmm mmm. Enjoy!
