Love peanut butter and banana sandwiches? Of course you do! Want it all in a slice of bread? Of course you do! It's so good with a little extra peanut butter spread on.
One of the great things about this quick bread is that the subtle hints of peanut butter and banana develop over time as well. I'd say it's best around day 2-4, but day 1 is downright delicious too. The banana comes out stronger on day 1, so if you want a really peanutty bread, up the PB. Enjoy!
Ingredients
1/3 cup yogurt
1/2 cup sugar
1/2 brown sugar
2 eggs
1 cup mashed ripe banana
3/4 cup chunky peanut butter
1 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon salt
1 teaspoon baking soda
Directions
1. Mix yogurt and eggs, one at a time, beating well after each addition. Add bananas and peanut butter; mix well. Combine the flour, sugars, salt, and baking soda; add to wet mixture.
2. Transfer to a greased 9x5 loaf pan. Bake at 350 degrees F for 70-75 minutes or until toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
