Oatmeal Raisin Cookies

Hook's Pointe Restaurant

Ingredients

3 1/4 c. flour
1 T. baking powder
1 1/2 t. ground cinnamon
1 t. salt
1 t. baking soda
2 1/8 c. shortening
1 3/4 c. brown sugar packed
1 1/2 c. granulated sugar
3 large eggs
1 t. vanilla extract
4 c. rolled oats
2 1/2 c. dark raisins

Directions

Blend flour, baking powder, cinnamon, salt and baking soda in mixing bowl. Set aside until needed.

Cream shortening with brown sugar and granulated sugar until fluffy. Beat in eggs and vanilla until smooth.

Mix in reserved flour mixture until well blended, about 2 minutes.

Add oats and raisins. Mix until blended, about 1 minute.

Using ice cream scoop (size #24), scoop out cookie dough into 4 dozen large balls.

Place about 6 balls on each lightly greased baking sheet, pressing down until about 1/4-inch thick and 3 inches in diameter.

Bake at 350 degrees for 9 to 12 minutes or until browned. Cool slightly, then remove cookies from sheets and cool on racks.

Chewy Peanut Butter Chocolate Chip Cookies

I love a soft, chewy cookie. Something about hard, crunchy cookies is a big turn off in most cases. Bleh!

So these cookies are perfect because I also love peanut butter. A soft, light, chewy peanut butter cookie is just what the day needs sometimes to end just right.

Omitting the chocolate does not diminish how delicious these are. In fact, I think they might be even better without it, though some chocolate fiends might disagree.

And the size is perfect. Small enough to get the full effect without feeling like you're gorging on cookies. So sometimes two is even ok!

Wow! These cookies are good. So good. Smack yourself across the face good.

Love pumpkin? Love oats? Love cookies? Who doesn't, right? Then you will go bat-crazy over these.

They're the perfect size for enjoying any time. Small enough to feel like you haven't overindulged yet their small stature keeps calling you back for more.

They're the best cookies I've ever made, and possibly the best thing I've ever baked. Perfection in every bite. If you have a go at them, tell me what you thought and if you made any changes. Enjoy!

Southern Banana Pudding Pie

Not my typical kind of dessert. But it wasn't a typical kind of day.

This hearkens back a month ago to Valentine's Day - wait, this goes all the way back to mid-January when we went to Luckenbach, Texas (middle of nowheresville) for the greatest Texas BBQ I've anyone's ever had. On that trip, after stuffing ourselves full of slow-roasted, -cooked, -braised brisket, pork, and ribs, we were introduced to a little southern hospitality in the way of Banana Pudding Pie.

I tasted it- let it hit all my taste buds. Hmm. Mmm. I like bananas, I like pudding, I like pie. Sold!

Yes, the above picture looks like eggs or some sort of ancient fertility goddess figurine, but despite the horrible photography, it really is something. So step on up and take a swing at Southern Banana Pudding Pie. Enjoy!

Southern Banana Pudding Pie

Yield: Serves 6-8
Ingredients
  • 2-3 bananas
  • 1 box vanilla wafers
  • 1 large box vanilla pudding mix (sugar-free if desired; plus the milk or non-dairy milk for it)
Cooking Directions
  1. Create the pudding mix as instructed on the box. Spread out a layer of wafers in a 9-inch pan. Slice bananas to desired thickness.
  2. Spread the pudding on the "crust". Top with bananas and press them into the pudding.
  3. Chill well. When ready, top with vanilla wafers, slice, and serve.
Alternatively (though I haven't tried this and I think the wafers would get really soggy) is to layer pudding then bananas then wafers then pudding then bananas then wafers and so on until you run out of ingredients. There's also the method of using a graham cracker crust as well. The texture will be different, yet delicious either way.

Eggnog Cookies

This is kind of a cheat (sort of). Sure, they'll taste like eggnog, but it's because there's eggnog in it. You could try making it taste like eggnog by just using rum and nutmeg flavors - though the proportions will be off. Eggnog is really easy to make too. It just takes some time. Ask me if you want to learn how.

If you're in a pinch, buy a store brand eggnog (though it will have lots of added sugar). These cookies come out kind of hard, so forewarn anyone who tries them that has sensitive teeth. The cool part is they look amazing and taste just like eggnog! And you get to use rum in the glaze. Yay! Enjoy.

So we found this recipe over at Just Doing My Best. They are oh so delicious! Plus, they're so tiny that popping one after another into your mouth doesn't seem so bad, right?

Here's the recipe as we used it. J added some mini chocolate chips to a batch for extra sweetness. These are highly addictive. You have been warned. Enjoy!
